Ingredients:

  • 4 medium zucchinis, sliced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1/4 cup crushed pork rinds
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped basil

Instructions:

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch dish.
  2. Layer half the zucchini slices in dish.
  3. Mix cream, mozzarella, parmesan, garlic powder, salt, and pepper; pour half over zucchini.
  4. Repeat layers and top with pork rinds.
  5. Bake for 20-25 minutes until bubbly. Garnish with basil.
