Ingredients:

  • 6 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced red bell pepper
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk eggs, almond milk, garlic powder, salt, and pepper until combined.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sauté red bell pepper for 2 minutes.
