Ingredients:
- 4 cups sliced yellow squash
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/4 cup crushed pork rinds
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh thyme
Instructions:
- Preheat oven to 375°F (190°C). Grease an 8×8-inch dish.
- Boil squash and onion for 5 minutes; drain well.
- Mix squash, 3/4 cup cheese, cream, garlic powder, salt, and pepper.
- Spread in dish, top with pork rinds and remaining cheese.
- Bake for 20-25 minutes until golden. Garnish with thyme.
