Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 medium zucchini, sliced
  • 1 tbsp chopped parsley

Instructions:

  1. In a bowl, mix olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper.
  2. Toss shrimp in half the marinade and thread onto skewers. Toss zucchini with remaining marinade.
  3. Preheat grill or grill pan to medium-high. Grill shrimp for 2-3 minutes per side until pink. Grill zucchini for 3-4 minutes per side.
  4. Garnish with parsley and serve hot.
