Ingredients:

  • 2 cups cooked chicken, shredded
  • 6 low-carb tortillas, cut into strips
  • 1 cup sugar-free tomato sauce
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
  2. Sauté bell pepper and onion until soft, about 5 minutes.
  3. Mix in chicken, tomato sauce, cream, chili powder, cumin, and salt.
  4. Layer half the mixture in dish, add tortilla strips, then remaining mixture and cheese.
  5. Bake for 25-30 minutes until bubbly.
