Ingredients:

  • 4 salmon fillets (4 oz each)
  • 1/4 cup chopped pecans
  • 1/4 cup almond flour
  • 1 large egg, beaten
  • 1 tbsp Dijon mustard (no sugar added)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp chopped parsley

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix pecans, almond flour, salt, and pepper in a shallow dish.
  3. Brush salmon with mustard, dip in egg, then coat with pecan mixture.
