Ingredients:
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 1 medium zucchini, diced
- 2 cups fresh spinach
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing for 3 minutes until soft.
- Add ground turkey and cook until browned, about 5 minutes, breaking it up with a spoon.
- Stir in carrots, zucchini, thyme, salt, and pepper. Cook for 2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add spinach and cook for 2 more minutes until wilted.
