Ingredients:

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 1 large egg, beaten
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1 cup sugar-free marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 8 fresh basil leaves

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix almond flour, parmesan, Italian seasoning, and salt in a shallow dish.
  3. Dip eggplant slices in egg, then coat in almond flour mixture.
  4. Heat olive oil in a skillet over medium heat. Fry eggplant slices for 2-3 minutes per side until golden.
  5. Place eggplant on the baking sheet, top each slice with marinara and mozzarella.
  6. Bake for 10-12 minutes until cheese is melted and bubbly. Stack 2-3 slices per serving and garnish with basil.
