Ingredients:

  • 1 lb boneless chicken thighs
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sun-dried tomatoes (packed in oil, drained)
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley

Instructions:

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes per side until cooked through (165°F). Remove and set aside.
  2. In the same skillet, sauté garlic for 1 minute. Add cream, parmesan, and sun-dried tomatoes, stirring until thickened, about 3 minutes.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. Return chicken to the skillet, coat with sauce, and garnish with parsley.
  5. Serve hot.
