Ingredients:
- 1 lb boneless chicken thighs
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 cup sun-dried tomatoes (packed in oil, drained)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped parsley
Instructions:
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes per side until cooked through (165°F). Remove and set aside.
- In the same skillet, sauté garlic for 1 minute. Add cream, parmesan, and sun-dried tomatoes, stirring until thickened, about 3 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Return chicken to the skillet, coat with sauce, and garnish with parsley.
- Serve hot.
