Ingredients:

  • 3 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup almond flour
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh thyme

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Place zucchini slices in a greased baking dish.
  3. Mix heavy cream, mozzarella, garlic powder, salt, and pepper. Pour over zucchini.
  4. Mix almond flour, parmesan, and melted butter for topping. Sprinkle over casserole.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. Garnish with thyme and serve.
