Ingredients:
- 3 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup heavy cream
- 1/4 cup almond flour
- 2 tbsp unsalted butter, melted
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh thyme
Instructions:
- Preheat oven to 375°F (190°C).
- Place zucchini slices in a greased baking dish.
- Mix heavy cream, mozzarella, garlic powder, salt, and pepper. Pour over zucchini.
- Mix almond flour, parmesan, and melted butter for topping. Sprinkle over casserole.
- Bake for 20-25 minutes until bubbly and golden.
- Garnish with thyme and serve.
