Ingredients:
- 1 medium cauliflower head (about 4 cups riced)
- 1 large egg

- 1/2 cup sugar-free tomato sauce
- 3/4 cup fresh mozzarella, sliced
- 1/2 cup cherry tomatoes, halved
- 8 fresh basil leaves
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pulse cauliflower florets in a food processor until rice-like. Microwave for 5 minutes, then cool and squeeze out moisture using a clean towel.
- Mix cauliflower, egg, shredded mozzarella, oregano, garlic powder, and salt to form a dough.
- Spread dough into a 10-inch circle on the baking sheet. Bake for 15 minutes until golden.
- Spread tomato sauce over crust, top with fresh mozzarella and cherry tomatoes. Bake for 8-10 minutes until cheese melts.
- Garnish with basil leaves and slice into 8 pieces.
