Ingredients:

  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp kosher salt
  • 1 tbsp erythritol
  • 2 cloves garlic, smashed
  • 1 tsp dill seeds
  • 1/2 tsp mustard seeds

Instructions:

  1. In a saucepan, bring vinegar, water, salt, and erythritol to a boil.
  2. Stir until dissolved, then add garlic, dill, and mustard seeds.
  3. Pour over prepared vegetables in a jar. Cool and refrigerate.
