Ingredients:
- 4 large red bell peppers, halved and seeded
- 1 lb ground turkey
- 1 cup cauliflower rice
- 1/2 cup sugar-free tomato sauce
- 1/2 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped cilantro
Instructions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook turkey until browned, about 5 minutes.
- Stir in cauliflower rice, tomato sauce, garlic powder, paprika, salt, and pepper. Cook for 3 minutes.
- Place pepper halves in a baking dish, cut side up. Spoon turkey mixture into each half.
- Cover with foil and bake for 20 minutes. Uncover, sprinkle with cheddar, and bake for 5 more minutes until cheese melts.
- Garnish with cilantro and serve.
