Ingredients:

  • 4 large red bell peppers, halved and seeded
  • 1 lb ground turkey
  • 1 cup cauliflower rice
  • 1/2 cup sugar-free tomato sauce
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped cilantro

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Cook turkey until browned, about 5 minutes.
  3. Stir in cauliflower rice, tomato sauce, garlic powder, paprika, salt, and pepper. Cook for 3 minutes.
  4. Place pepper halves in a baking dish, cut side up. Spoon turkey mixture into each half.
  5. Cover with foil and bake for 20 minutes. Uncover, sprinkle with cheddar, and bake for 5 more minutes until cheese melts.
  6. Garnish with cilantro and serve.
