Ingredients:

  • 1 large ripe avocado, halved and pitted
  • 2 small eggs
  • 1 tbsp chopped chives
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup arugula (for serving)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Scoop out a small amount of avocado flesh to create a larger well for the egg.
  3. Place avocado halves in a baking dish, cut side up. Crack one egg into each half.
  4. Sprinkle with salt, pepper, and paprika.
