Ingredients:

  • 4 cups sliced yellow squash
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup crushed pork rinds
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh thyme

Instructions:

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch dish.
  2. Boil squash and onion for 5 minutes; drain well.
  3. Mix squash, 3/4 cup cheese, cream, garlic powder, salt, and pepper.
  4. Spread in dish, top with pork rinds and remaining cheese.
  5. Bake for 20-25 minutes until golden. Garnish with thyme.
