Ingredients:

  • 4 cups cauliflower rice
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1/4 cup crushed pork rinds
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped green onions

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Microwave cauliflower rice for 5 minutes; drain excess moisture.
  3. Mix cauliflower, sour cream, 3/4 cup cheese, broth, garlic powder, onion powder, salt, and pepper.
  4. Spread in dish, top with pork rinds and remaining cheese.
  5. Bake for 25-30 minutes until bubbly. Garnish with green onions.
