Ingredients:

  • 2 cups pumpkin puree (no sugar added)
  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp pumpkin seeds (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 3 minutes.
  2. Add pumpkin puree, broth, pumpkin pie spice, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
  3. Use an immersion blender to puree until smooth.
  4. Stir in heavy cream and heat through.
  5. Garnish with pumpkin seeds and serve hot.
