Ingredients:

  • 1 medium cauliflower head, cut into small florets
  • 8 oz Italian sausage (no sugar added)
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 2 tbsp olive oil
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Cook sausage until browned, about 5 minutes, breaking it up.
  2. Add celery and onion, sauté for 5 minutes until soft.
  3. Stir in cauliflower, sage, thyme, salt, and pepper. Cook for 15 minutes until cauliflower is tender.
  4. Garnish with parsley and serve warm.
