Ingredients:

  • 4 cups broccoli florets
  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 3 minutes until soft.
