Ingredients:

  • 2 ripe avocados, pitted and scooped
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsweetened almond milk
  • 2 tbsp erythritol
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 4 fresh raspberries (for garnish)

Instructions:

  1. Blend avocados, cocoa powder, almond milk, erythritol, vanilla, and salt in a food processor until smooth.
  2. Divide mousse into 4 small cups or ramekins.
  3. Chill in the refrigerator for at least 1 hour to set.
  4. Garnish each with a raspberry and a light dusting of cocoa powder before serving.
