Ingredients:
- 1 large eggplant, sliced into 1/2-inch rounds
- 1 large egg, beaten
- 1/2 cup almond flour

- 1 cup sugar-free marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 8 fresh basil leaves
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix almond flour, parmesan, Italian seasoning, and salt in a shallow dish.
- Dip eggplant slices in egg, then coat in almond flour mixture.
- Heat olive oil in a skillet over medium heat. Fry eggplant slices for 2-3 minutes per side until golden.
- Place eggplant on the baking sheet, top each slice with marinara and mozzarella.
- Bake for 10-12 minutes until cheese is melted and bubbly. Stack 2-3 slices per serving and garnish with basil.
